I’ve decided that I don’t make a good gardener being 7 months pregnant in the heat of summer. I haven’t been able to work in the garden very much this year which is quite discouraging to me. However, I’m become more ok with that fact. After all, I am growing a baby this year!
My children have been picking garden produce and bringing it in to me. We’ve been getting cherry tomatoes, zucchini, cucumbers, basil and yellow squash so far. I’ve been sauteing the zucchini and squash with onions and adding over rice or adding to pasta. The basil adds lots of flavor as well!
We’ve been eating lots of cucumbers every day, however because of the heat and irregular watering, many of the cucumbers have been bitter. We’ve been giving the bitter cucumbers to the pigs.
As the summer goes on, the more garden produce comes in and the more money we save by not having to buy the vegetables we grow. The produce from the garden also encourages me to use what I have and find creative solutions for using up the food that is grown. And after watching Food, INC. last night, I’m really motivated to figure out how to grow more of our food!
